GREEK GREEN BEANS and Chicken Kebab

Happy Monday!
My weekend was busy , we were working on some awesome projects that I can not wait to share here with you!
Let’s start this Monday with a great recipe again though.
I will dedicate Mondays for recipes from now on, although I stayed  pretty much  with this schedule I had some Mondays without recipes posted.
Today I am sharing this super delicious authentic GREEK GREEN BEANS recipe!
We love to go to a local Greek festival with the family every year, and  one of our favorite Greek dish is the Greek green beans, also called FASOLAKIA.
Fasolakia is a traditional Greek dish and it is absolutely fantastic. Fresh green beans slowly cooked to perfection in tomato sauce  and with onions. Very tasteful. You can serve it hot or cold.
I have been making this recipe for a long time and it’s absolutely family favorite.
 I served it with  grilled chicken kebab and some grilled tortillas and we sure licked our fingers after finishing this meal.
GREEK GREEN BEANS { fasolakia } & Chicken Kebab 

INGREDIENTS: 

1 tbsp. Olive oil 

1 medium onion, diced 

2 cloves garlic, chopped 

1 can diced tomatoes or 4 cups fresh tomatoes 

1 lb green beans 

½ tsp. oregano 

Salt and pepper to taste 

¼ cup parsley, chopped 

Chicken kebab: 

2 boneless chicken breast 

1/2 medium onion 

½ green peppers or other veggies (optional ) 

Salt and pepper to taste 

Bamboo sticks 

DIRECTIONS: 

Heat olive oil in a pan 

Add onions and sauté until tender, about 5-7 minutes than add garlic. 

Add tomatoes, green beans, oregano, salt and pepper and simmer until the beans are cooked, about 40 minutes. 

Remove from heat and add parsley, if you wish garnish with feta (optional) 

Chicken Kebab: 

Salt and pepper chicken breast cutlets and arrange them on a bamboo stick with onions and peppers or the veggies of your choice. Grill it until tender and golden brown.
