Shush Kabobs – sweet glazed apple meatballs
I cook a big variety chicken and turkey dishes.These meatballs are definitely family favorites.For some reason my kids don’t eat much meat unless I serve it in a unique way.Sometimes I have to be creative with how I put the meat in front them… .
I found this excellent idea and recipe in Parents Magazine. I have been making this meatball recipe ever since we tried it. Serve it on the stick made the trick. They love it!
Give it a try if you have picky eaters…as you see my little boy couldn’t wait to have a bite..:-)
Shush Kabobs
Ingredients:
1 cup whole wheat Breadcrumbs
¼ cup grated Parmesan cheese
1 egg
1 tbs Dijon mustard
1 tbs chopped parsley (fresh or dried)
¼ tsp salt and pepper
1 medium apple, coarsely grated
1 medium apple, coarsely grated
1 lb ground turkey breast
2 tbs canola oil
Glaze:
½ cup apple juice or cider
¼ cup maple syrup
1 tbs balsamic vinegar
Directions:
Combine breadcrumbs, cheese, egg apple, mustard, parsley, apple ,salt and pepper in a bowl. Mix well and add ground turkey.
Roll meat mixture into small balls. Fry in heated oil until meatballs are browned and cooked through, approx. 15 minutes.
Glaze:
In a pan mix apple juice, maple syrup and balsamic vinegar. Simmer over low heat until reduced by half.
Serve meatballs on a stick and cover with glaze.
