STRAWBERRY BIRCHER MUESLI

Strawberry season is finally here! I can’t wait to go next week to pick some yummy fresh strawberries with the boys! It’s an every year thing that we do as a family! So much fun! Strawberries are one of my kids favorite fruits ever! Our mornings are pretty hectic but I can not leave the house without eating breakfast. And let me tell you, I love to start my day with a healthy breakfast.
Today I am going to share my new favorite breakfast with you all. Give it a try, you won’t regret it!
This delicious breakfast muesli can be made with blueberries, blackberries or basically with any fresh fruits. When I get enough sleep and wake up early enough I prepare the oats in the morning. If that, I usually don’t let the oats sitting in the juice for more than 30 minutes. They are perfect and moist after so little time. If you prefer, you can let the oats sit in the refrigerator for the whole night.
- 1 cup rolled oats
- 3/4 cup apple or orange juice
- 1/4 cup chopped walnuts
- 1 medium apple, chopped
- 1/2 tsp ground cinnamon
- 1/2 cup plain yogurt
- 2 tbsp honey
- 1 cup fresh strawberries
- Put the oats and apple/orange juice in a bowl, then cover with plastic wrap and let it soak in the refrigerator for 1/2 hour.
- Spoon oat mixture into serving bowls and layer the apples,strawberries, yogurt and walnut on the top. Drizzle with cinnamon and honey.Top it with strawberries and yogurt.Enjoy!
You can make a big bowl of these soaked oats and serve it for any gatherings or breakfast brunch with your choice of fresh fruits.

If you let the oats soak for longer (per se overnight) do they get too soggy?
