Asparagus & Tomato Salad

Well, this is going to be on your favorites list if you like asparagus. Not everybody loves them, I know. I only started eating them few years ago. For some reason, they weren’t very appealing to me, so I never bought them. I am so glad I discovered the goodness of asparagus as it is so healthy, such great source for calcium, protein, fiber and so much more. Today I am sharing an amazing Warm Asparagus & Tomato Salad and this recipe was inspired by Cheesecake Factory’s asparagus salad. The flavor was just absolutely great, and we loved it so much so I knew that I would have to replicate this recipe at home as we don’t go to Cheesecake Factory very often.

 We just came back from vacation last weekend and I can not tell you how much I enjoyed being in my own kitchen finally. Vacations are great but there is nothing like being home in your own little nest.

Anyways…back to the recipe.

Asparagus is best when it cooked for a short time and still crisp. The end of the asparagus stems should be broken off as it could  be woody if the asparagus is little older. I normally break the steam where it naturally breaks off, it is usually about a 2 inches off of the steam.

WARM ASPARAGUS & TOMATO SALAD

Ingredients
  • 1 pound fresh asparagus
  • 2 cups grape tomatoes
  • 2 tbsp olive oil
  • 3 garlic cloves/crushed
  • 2 tbsp. pine nuts
  • salt and pepper to taste
  • crushed red pepper fakes
  • 2 eggs
Instructions
  1. Heat olive oil in a skillet over medium heat and cook asparagus until bright green but still crisp. for about 4-5 minutes. Set aside on a plate.
  2. Add another tbsp. oil in skillet then add garlic, tomatoes and pine nuts and roast them together for 3-5 minutes, sprinkle with red pepper flakes, salt and pepper to taste.
  3. Prepare your eggs the per your preference.
  4. Serve Asparagus on two separate plates, topping with the tomato mix and sunny side up eggs. (or however your prefer your eggs)
  5. Yum!

 Such a great appetizer. The egg yolks and the fantastic crisp asparagus with the roasted tomatoes are excellent.
