HERB OVEN ROASTED POTATOES

Easy, delicious, quick side dish.
Ingredients
  • 2 lbs red or yellow skinned potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon each dried parsley, garlic powder, rosemary, black pepper
  • 1 medium red onion, sliced
  • coarse salt to taste
Instructions
  1. Preheat oven to 425 degrees.
  2. Scrub potatoes (do not peel them). Slice into even sized cubes about 1”
  3. Toss potatoes, onions, olive oil, garlic, and seasonings
  4. Place on a baking sheet lined with parchment paper
  5. Bake for 30-35 minutes until browned and tender
