PEACH JAM { with agave nectar }
  • PEACH JAM { with agave nectar }
  • 6 cups peaches, skins removed and sliced
  • 2.5 cup light agave or 2.5 cups sugar
  • 2 tsp. lemon juice
  2. Wash peaches and remove skins.
  3. Slice them to little cubes
  4. In a medium pot boil the peaches , agave and lemon juice.
  5. Simmer over low heat, stirring occasionally until it has reduced a great deal and peaches become translucent. { about an hour }
  6. Test the consistency of the jam by dipping a metal spoon into the jam. If the jam runs off the spoon, cook it longer. When the spoon has a nice coat , the jam is done
  7. Fill your jars with jam and boil them for 10 minutes { or use your own canning method
