VERY BERRY CUPCAKES

Ingredients
  • Cupcakes:
  • 1 Box White Cake Mix
  • 1 -3.5 oz. Package Instant Vanilla Pudding Mix (dry)
  • 4 Egg Whites
  • 1 tsp Vanilla Extract
  • ½ cup Sour Cream
  • 1 cup Milk
  • ⅓ cup Vegetable Oil
  • Frosting:
  • 2 cup Heavy Cream
  • ½ cup Confectioners' Sugar
  • ⅓ cup Instant Vanilla Pudding Mix (dry)
  • 7 oz. package of Freeze Dried Strawberries
  • Blueberry Pie Filling (store bought or homemade)
Instructions
  1. Cupcakes:
  2. Preheat oven to 375 F.
  3. Line cupcake pan.
  4. Combine cupcake ingredients in a stand mixer or large bowl and beat until combined.
  5. Add about 2 tbsp of batter to each cupcake liner so they're each ½ - ¾ full.
  6. Reduce heat to 350 F.
  7. Bake cupcakes for 18-20 minutes.
  8. Frosting:
  9. Add freeze dried strawberries to a food processor and process until fine.
  10. Beat heavy cream, confectioners' sugar, and pudding mix for about a minute and then add in the strawberry powder.
  11. Pipe frosting around the edge of the cupcakes.
  12. Fill the area inside of the frosting with blueberry pie filling.
