SUMMER VEGGIE SPAGHETTI

Ingredients
  • 2 ear of corn
  • 2 cups fresh green beans
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 3 medium tomatoes
  • 1 medium onion, diced
  • 3 garlic cloves
  • 1 lb (whole grain)spaghetti
  • water
  • 1 lime, juiced
  • salt, pepper to taste
Instructions
  1. Cook (whole grain)spaghetti in water according to package direction.
  2. Cook corn, green beans and broccoli in water for about 5 minutes or until tender.(salt and pepper to taste)
  3. In another pan heat olive oil and saute onions, garlic, carrots for about 5 minutes then add tomatoes and saute for another 2-3 minutes.Use salt and pepper per your taste.
  4. Cut the corn off the cob then mix pasta and all cooked veggies together. Squeeze 1 juice of lime and add 2 tbsp of olive oil to pasta and veggie mix and stir together.
  5. Serve immediately.
