Finally we have seen some sunshine over the weekend and that means we spent lots of time outside with the kiddos. Our neighborhood had a great St. Patrick’s Day Celebration and we spent the whole Saturday afternoon outside with friends and neighbors. Although they provided food and drinks, we needed some quick dinner on the table after we got home. It was a long and exhausting day and I wanted something quick yet delicious. Thankfully, I went to Walmart earlier and got a bag of Tyson: Grilled & Ready Chicken and a great Italian marinade from Wish-Bone.

Lately, I really feel like I wish I had 2 of me. Seriously. I overwhelm myself with work, projects and activities with the kids. But I feel like I could not live otherwise.
In our crazy life, I always try to choose easy and quick dinner recipes for my family. After a busy day, like this past Saturday nothing would have been more pleasing but a flavorful flatbread with chicken and fresh veggies. I love making flatbreads because the possibilities are endless with toppings. As a base, I either make my own dough { I use my bread dough recipe } or a store bought already made flatbread. Before we went for our St. Patrick’s day celebration, I prepared my dough quickly,{ in about 2 minutes } and let it sit until we got back in the evening.
Although, the chicken was ready to eat, I marinate for a few minutes in Wish-bone Italian sauce to add some flavor to it.
I chopped the chicken to little bite size pieces.
- Pizza dough {homemade or ready flatbread}
- 8 oz tomato sauce
- 2 Tyson:Ready & Grilled Chicken
- 1 pack of Wish-bone ITALIAN dry mix marinade
- 1/2 cup cherry tomatoes
- 1/2 cup mushroom
- 1/2 cup spinach
- 1/4 cup mozzarella cheese
- Few fresh leaves of basil
- Parmesan cheese
- Preheat oven for 425 F.
- Prepare Wish-bone dry mix as directed on the box.
- Marinade 2 Tsyon:Grilled & Ready chicken breast until you prepare the pizza dough and on a baking sheet.
- Spread tomato sauce on the dough.
- Drop chopped chicken, tomatoes, mushroom, spinach and mozzarella cheese and fresh basil on the dough or flatbread.
- Bake it for about 15 minutes or until the dough is golden brown.
- Serve warm and drizzle with Parmesan Cheese.
Layered all ingredients on my dough and after baking it for about 15 minutes, we were able to enjoy our pretty, yummy and crunchy creation.
This flatbread definitely is a keeper. I can not wait for nice and long breeze summer nights when we can enjoy these easy and quick dinners outside on the patio and relax after dinner while watching my boys running around in the backyard. Hmmm. Dreaming.
