PINWHEEL COOKIES { Red, White and Blue }

As Independence day fast approaching, my boys and I made some fun looking pinwheel cookies with red, white and blue food coloring added.
We love cookies and I had all ingredients for this cookie in my pantry. Based  on the original recipe, I was suppose to keep the dough in the fridge for 3 hours, however we only kept it  for maybe an hour and cookies turned out pretty good.
 Although the shape is not a perfectly round, I am sure all these cookies will be gone by tonight..:-)
My oldest “little monkey”was a huge help making the dough.
He loves to help when it comes to making dessert…

PINWHEEL COOKIES 
{ Red, White and Blue }

 

INGREDIENTS:
3 cups all purpose flour
½ tsp baking powder
½ tsp salt
1 cup unsalted butter
1 cup sugar
2 large eggs
2 teaspoon vanilla extract
Red, White and Blue food coloring
DIRECTIONS:
1,In large bowl, sift together flour, baking powder, and salt.
2, In standing mixer fitted with paddle attachment, beat butter until fluffy, about 3 minutes. Add sugar and beat until light and fluffy, about 2 minutes more.
3, Add eggs 1 at a time, beating after each addition, then beat in vanilla.
4,Add flour mixture and beat on low just until combined.
5,Divide dough in 3.
6, Form 1 third into 4- by 4-inch square, wrap in plastic wrap, and set aside.{ This will be the white dough}
 7,Return other third to mixer. Add red food coloring, as much as you prefer. Form dough into 4- by 4-inch square and wrap in plastic wrap and set aside.
.8, Return the last third to mixer. Add blue food coloring, as much as you prefer. Form dough into 4- by 4-inch square and wrap in plastic wrap and  refrigerate all 3 squares of dough 30 minutes.
Line large baking sheet with parchment paper. Cut each dough square into 2 half’s. Take one half of each color and place between 2 sheets of parchment paper.
Roll out into 6- by 7-inch rectangle. Peel off top sheet of parchment from each dough and flip dough over onto red dough, aligning top and bottom edges and allowing 1/2 inch of red dough to stick out on each side,then peel off top sheet of parchment. L 3 layer using same method on top of eachother. Starting on folded-over side and using parchment as aid, tightly roll up dough into log. Wrap in plastic wrap and refrigerate. Repeat previous step with other half dough.
Refrigerate logs 1 hour, then remove from refrigerator and roll each log on counter several times to prevent bottom from flattening. Refrigerate 3 hours more.
Before ready to bake , slice dough into ¼ inch thick slices and lay it on baking sheet. Bake for 9-11 minutes on 350 degrees.
