LEMON DILL SALMON
Hello and Happy Monday!
I just hate to see Sundays coming to an end. Are you feeling the same way? My morning schedule has changed a bit since B has started Kindergarten.The bus gets here super early and that means I have to get out of the bed really early to get his lunch packed and to get the boys ready to go. Last week was such an adjustment but I guess my body starts getting used to it. I signed my boys up for some activities so some nights are busy with practices. For those nights I love to put a quick and easy dinner on the table like this amazing Lemon Dill Salmon.
Salmon is one of my favorite fishes. Yum! I have several yummy ways to make it but this recipe is indeed my favorite.
- 2 salmon fillet
- 2 tsp butter
- 1 tsp olive oil
- 1 clove of garlic, minced
- salt and freshly cracked pepper, to taste
- Fresh or dried dill
- Lemon slices
- Preheat the oven to 450 degrees
- Line a baking sheet with tin foil then coat it with cooking spray.
- Combine olive oil,butter and garlic together then spread evenly over the top of the salmon. Season with salt and freshly cracked pepper, to taste. Sprinkle freshly chopped dill { or dried dill }all over followed by a layer of lemon slices.
- Bake for 10 minutes or until the salmon flakes easily with a fork.
- Enjoy.
