ONE-PAN CHICKEN PASTA WITH SPINACH AND SUN-DRIED TOMATOES

What a busy weekend it was! Halloween, family programs, bonfire with Friends…Phew! I like to be busy, but sometimes it would be nice to slow down a bit and relax. When my weekends are busy I barely spend any time in the kitchen and these days call for super quick meals.This past weekend I made this quick and easy One-pan chicken pasta with spinach and sun-dried tomatoes using Barilla® Pronto Penne. To tell you the truth, both of my kids licked their plates. Wowza! They love what mommy makes but they sure don’t lick their plates every day!
I went grocery shopping to Martins and picked up a few boxes of Barilla Pronto Pasta. The pasta can be cooked together in one-pan with all other ingredients, no need to precook it. Make sure you grab some New Barilla Pronto Pasta next time you shop at Stop & Shop, Giant Food Stores, or Martin’s Food Markets because it will make your weekday’s dinners so much easier. Barilla Pronto Pasta is also available through Peapod! We mainly eat chicken so I used that for this dish. I always have chicken handy in my freezer. I added some key ingredients, such as sun-dried tomatoes and spinach to my pan that made this dish flavorful.
- 2 halves chicken breast
- 2 tsp olive oil
- 1 medium onion diced
- 3 cloves garlic
- salt, pepper to taste
- 2 cups spinach
- 1 cup sundried tomato
- 2 cups chicken broth
- 1 cup half and half
- 1 box Barilla Pronto Penne
- parsley
- 1 cup mozzarella cheese
- Heat 2 tsp olive oil. Add diced onion and garlic and cook it for 3 minutes.
- Add sliced chicken then cook it for 5 min.
- Add sundried tomato and spinach, pour in 2 cups chicken broth.
- Add a whole box of Barilla Pronto Pasta and add 2 cups water.
- Sprinkle with parsley.
- Cook it for 10 minutes.
- Add half and a half then add cheese on top and cover for a few minutes.
- Enjoy!
Yummy one-pan meal! It is going to be on our family’s favorites list for sure. I typically don’t plan out every single meal for the week; it just doesn’t work for me. The only way to save those days when I have nothing planned is to stock up on this great Barilla® Pronto pasta for quick and easy pasta dishes.
This dish can be made with any other vegetables as well. Just substitute the spinach and sun-dried tomatoes, if you wish.
