Easy BROCCOLI soup

Another great and DELISHes soup. I make this soup in two different ways usually.The one I am posting here is without cheddar cheese, but if you have extra cheese at home you can definetly add some to it.
 Broccoli is full of vitamin C– so this soup not only will make you warm on a cold day but it will make a healthy lunch.
According to this recipe below -this soup should be pured ,however, we love eating the big broccoli chunks, so I never pure it.



4 tablespoons butter

1 1/2 pounds fresh broccoli

1 large onion, chopped

1 carrot, shredded

 Salt and freshly ground black pepper

4 cups low-sodium chicken broth

1/2 cup cream

Bread croutons(optional)


Melt 4 tablespoons butter in heavy medium pot over medium-high heat. Add broccoli, onion, carrot, salt and pepper and sauté until onion is translucent, about 6 minutes. Add the flour and cook for 1 minute, until the flour reaches a blonde color. Add stock and bring to boil. Simmer uncovered until broccoli is tender, about 15 minutes. Pour in cream.

If you wish, pure the soup  in blender.(I usually don’t pure it, we love eating broccoli chunks..) Add salt and pepper to taste if needed.
