Crepes have been a prized staple, slowly savoring their success in every corner of the globe. Typically, there are two types of crepes: crepes with sweet fillings and desserts with its presence, and the crepes with savory fillings.

Ingredients

  • 1 cup of all-purpose flour
  • 1 1/2 cups of milk (optionally, to make it lighter, a half milk-half water mixture)
  • 2 large eggs
  • 2 tablespoons of melted unsalted butter (and extra for cooking)
  • A pinch of salt
  • 1 tablespoon of sugar (optional)

Instructions

  1. In a large mixing bowl, whisk the flour, salt, and sugar (if you choose to add crepes).
  2. Create a well in the center and crack the eggs into it. Pour in the melted butter.
  3. Start whisking, gradually pulling in flour from the sides, and slowly pour in the milk to prevent lumps.
  4. Whisk until the batter is smooth and consistent.
  5. Let the batter rest for at least 30 minutes at room temperature or overnight in the fridge to allow the gluten to relax for tender crepes.

Notes

Makes 8-10 crepes.

Your crepe batter should have the consistency of heavy cream; if it's too thick, gently whisk in a little more milk. To ensure a lump-free batter, strain it or give it a blitz with a blender.

Cooking Techniques

I make them two different ways:

  1. Using a crepes pan
  2. Using my outdoor griddle (I love my HALO griddle!)

  • Pour a ladle of batter into the center of the pan, lifting, tilting, and rotating the pan to evenly spread the batter thinly across the bottom. You can also use a crepe spreader- which is super helpful!
  • Cook until the edges begin to lightly brown, about 1 minute, then gently flip with a spatula, and cook the other side for about 30 seconds.

Using an outdoor griddle:

  • Preheat the outdoor griddle and brush it lightly with butter.
  • Pour a ladle of batter into the center of the griddle and spread it with the crepe spreader.
  • Cook until the edges begin to lightly brown, about 1 minute, then gently flip with a spatula, and cook the other side for about 30 seconds.
