Springy Lemon Sugar Cookies
Adorable and springy lemon sugar cookies. When you have a craving for cookies, these are really easy and quick to make, try it!

Are you ready to see some darn cute cookies today?
Some days I have such a craving for cookies. When that moment comes, I instantly get on cookie making with my boys. They absolutely love getting messy in the kitchen with their mommy.
These easy lemon sugar cookies are perfect to ring in spring and the taste is so super fresh.
Spring is all about flowers, so I made up these cute cookie flower pots using lemon sugar cookies for a base. I dropped small dots on my cookies and they turned out just darling.
We love making cookies, however, we never really make icing covered cookies. I can never decorate beautifully with icing. I chose pink and blue to decorate but it’s really up to you what color you go with. The icing is made with powdered sugar, food coloring and a little bit of water.
I bought these small flower pots at dollar store { 3/$1 } and dropped some colorful eggs in the bottom to hold the flower stick.
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 2 large lemons
- 3/4 cups granulated sugar
- 1 cup unsalted butter, at room temperature
- 1 large egg
- 1/2 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
- 1/4 cup granulated sugar for rolling cookies
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats. Set aside.
- In a small bowl, whisk together flour, baking soda, baking powder and salt.
- Using a mixer, beat together butter and sugar until smooth and creamy.
- Add lemon zest, egg, vanilla extract, and lemon juice. Mix until combined. Gradually blend in the dry ingredients.
- Roll rounded tablespoons of dough into balls and roll in sugar. Place on prepared baking sheets, about 1 1/2 inches apart.
- Bake 8 to 10 minutes or until cookies are slightly brown around the edges and set.
- As soon as you take it out from the oven, push small stick into your cookies before they cool.
- Let cookies sit on the baking sheets for two minutes before transferring to a cooling rack.
- Decorate with icing
They are so super cute and will make adorable gifts.
