BLUEBERRY OATMEAL BARS
Today I am sharing an easy and healthy snack recipe.This great snack only need a few ingredients, and you most likely have those ingredients in your pantry and refrigerator. That means so you can jump right into it and make it for today’s afternoon snack. My kids love to snack and I love whey snack on something that is not full of sugar. The original recipe called for 1 cup sugar, however I only used 1/2 cup, and it was just delicious, not too sweet.
It really only takes a few minutes to put it together. Super easy.
- 2 sticks butter { salted }
- 1 1/2 cup all purpose flour
- 1 1/2 cup oats
- 1 cup brown sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- Blueberry jam
- Preheat the oven to 350 degrees F.
- Place baking sheet to a 9 x 13″ rectangular baking pan.
- Mix together the butter, flour, oats, brown sugar, baking powder and salt.
- Press half the oat mixture into the prepared pan.
- Spread with the blueberry jam.
- Sprinkle the other half of the oat mixture over the top and pat lightly.
- Bake until light brown, 25-30 minutes.
- Let cool completely, and then cut into squares.
I only had blueberry jam at home but substitute it with your favorite jam. I tried with strawberry just recently and it was just as great as with blueberry jam.
Cut them in squares and send them off to school with your kiddos.
What a great and healthy to go snack it will make.
The top of these oatmeal bars were a bit crumbly but my kids loved them and so did I. Our pan got empty pretty soon and didn’t have much left at the end of the day. You can store it for next day by putting it into a plastic box.

Where the oats you used quick cooking or the rolled oats?
Pam, sorry for the late response, I was on vacation…I usually have rolled oats at home and that’s what I use for my baking and cooking needs. Hope you will enjoy!Have a great night!
Do you think you could use fresh blueberries instead of jam?
Sylvia, I think you could use fresh blueberries. I would maybe cook them with a little bit of sugar and water so it would have a little bit thicker sauce. Let me know how it worked out! have a great day!
