VERY BERRY VANILLA PARFAIT WITH TOASTED PECANS
Happy Monday Friends! I am so excited about this week as I am going to see some of YOU , talented ladies, this coming weekend at Haven! Yay! My week definitely had a happy start with this amazing breakfast parfait that I put together last night.
I am a breakfast person and can not leave the house in any circumstances without having breakfast.
No no!
As we are in the middle of berry season there is always plenty of berries in our refrigerator. We are huge berry lovers! Strawberry, blueberry, blackberry…. you find them all on in my fridge!
There is one more thing in my refrigerator that smiles back at me every day. It’s my Coffee -mate creamer. I shared my favorite chocolate chip mocha with you back in March, using Coffee-mate creamer. I don’t only use the creamer for my morning coffee but I use it in my very berry breakfast parfait to add a splash of vanilla. Coffee-mate doesn’t believe in “plain vanilla” ,they came up with a distinctive and exceptional vanilla experience with their new Classic Vanilla creamer. I truly love it’s flavor! Is driven by beany, woody and vanillin notes with very little marshmallow and icing character. It is balanced and aromatic.
Vanilla is anything but boring. Vanilla is a classic flavor – and it can be exciting too! I remember when I was a little girl and I spent time with grandma in the summertime she made me lots of crepes ans she always added a slight vanilla flavor to it. Ohh…I can still feel it in my mouth. It’s amazing how we remember for certain things. #TakeBackVanilla because it’s NOT boring. It’s rather exciting!
- 2 cups plain yogurt
- 3 tablespoons Coffee-mate classic vanilla creamer
- 1 cup chopped strawberries
- 1 cup blueberries
- 1 cup blackberries
- 1 cup pecans
- 3 tbsp sugar
- In a bowl mix together plain yogurt and Coffee-mate classic vanilla creamer
- In a serving glass layer the yogurt mix and chopped fruits.
- Add 3 tbsp sugar in a pan, heat it up and add chopped pecans. Toast for about 2-3 minutes and serve it on the top of the parfait before serving.
The splash of vanilla and the toasted pecans on the top of my very berry vanilla parfait absolutely made this breakfast a unique experience.

What a great idea, adding the flavoured coffee creamer! My husband & I both dont drink coffee (yep, I’ve tried but can’t stand it, lol) but I always think the coffee creamers have such fun flavours! I’ll have to try this method! Thanks for sharing, Aniko!
