APPLE PIE WITH SALTED CARAMEL
Today I am sharing the best apple pie recipe. Guys! I love pie!
Hello-hello! It’s Monday and it’s recipe time:-) How about some Apple Pie!? Or maybe Peach Pie?
I had a busy, but great weekend. How was yours?
I was able to assist and shoot my first wedding on Saturday( if you are new here, I do a little bit of photography in part time – Aniko Levai Photography )and yesterday we went to apple picking with the family. This apple picking trip wasn’t planned for this weekend at all as I wanted to catch up on finishing my gallery wall (inspiration here) but the weather was way too gorgeous to stay inside and we love to be spontaneous so we decided to jump in the car in the morning and drive up to the mountains to pick some crunchy and juicy apples from an apple orchard.
We eat lots of apples. IÂ pack apples for the boys every day.
Can you tell that this little dude LOVES his apple ♥? So cute with his adorable dirty little fingers..:-)
I think he only ate apples yesterday…
for lunch,
for snack
and for dinner as well:-)
We came home with about 16 lbs of apples and I could not wait to turn my oven on to bake this delicious Apple Pie.
I found this super easy recipe on the web here. It called for all purpose flour but I only had whole wheat flour at home so I used that instead. It was phenomenal with whole wheat flour so if you only have that at home, don’t run to the grocery store.:-)
- Pie Crust:
- 2 1/2 cups whole wheat flour or all-purpose flour
- 2 sticks unsalted butter, cut into 1/2 inch cubes
- 1 teaspoon salt
- 2 teaspoons sugar
- 1/2 cup sour cream
- Filling :
- 5 or 6 large cooking apples
- 1 Tbsp of lemon juice (to toss with the sliced apples so they don’t brown as you slice them)
- 1/2 cup brown sugar
- 3 tablespoons whole wheat ( or all purpose flour) for thickening
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1 teaspoon vanilla extract
- Egg yolk and cream
- For the salted Caramel:
- 1 1/2 cups sugar
- 1/4 cup water
- 1 tsp. fresh lemon juice
- 1 1/2 cups heavy cream
- 1 1/2 tsp. sea salt
- Preheat oven 375F.
- Whisk together 2 1/2 cups of flour, salt, and 2 teaspoons of sugar. Add the cubed butter and use your clean dry hands to toss to coat with the flour. Work the butter into the flour with your hand. Make a well in the center and add the sour cream to it. Work the buttered flour and the sour cream into each other until the dough begins to clump. Separate the dough mixture into 2 equal sized piles and work each one first into a ball, and then into a disk. Sprinkle with flour and wrap with plastic wrap. Refrigerate for 1 hour before rolling out.
- While the dough is sitting in the refrigerator peel, core and slice the apples. As you cut your apple slices, add them to a large bowl and sprinkle them with a little lemon juice to help keep them from turning brown.
- Combine sugar, flour and spices in a bowl. Add the flour mixture to the apple slices and use your hands to distribute the flour through the apples so they are well coated. Then sprinkle with vanilla extract and stir to coat all the apples.
- Remove one crust disk from the refrigerator. Let sit at room temperature for 5-10 minutes. Roll a round shape or rectangle shape ( I made two medium size pie, one round, one rectangle shape)of the dough.
- Place the rolled dough on a parchment paper on a baking sheet and add apples in the middle. Fold the edges on the apples and press it down with your fingers.
- If you choose to make a rectangle shape, you can make it look nice with cutting a few stripes of the dough and lay those stripes across the top of the pie.
- Mix the egg yolk and cream together and brush the pie with it.
- Bake it until pie crust is nice, golden brown.
- Salted Caramel:
- Combine the sugar, water and lemon juice over medium heat. Cook until the mixture bubbles and turns a golden color, about 10-12 minutes. Stir the sugar with a wooden spoon during the first 2 to 3 minutes of cooking; do not stir after this point, instead swirling the pan to ensure even cooking. Watch the caramel very carefully, and as it will go from amber colored to burned in a few seconds.Remove the pan from the heat and immediately add the cream very carefully as the mixture will bubble. Stir until the sauce is smooth.Stir in the salt and let cool until just warm.
I made two small/medium size pie with the listed ingredients. I could have make one bigger pie but I like to play with my dough when it comes to baking;-)
The pie crust was so flaky and delicious. Hands down that home made pie crusts are the best.
For extra indulgence, I made  Salted Caramel Sauce to go with this fantastic Apple pie.Â
The two together makes
H-E-A-V-E-N
Yep. And I am not kidding!
I think this recipe will be penciled for “family favorites” list as it did not last long. Â Hubby ( who really watch his diet these days, had at least 3 slices:-))
