Healthy Mediterranean Chicken & Quinoa SALAD sprinkled with almond for perfection.
It’s a new year and it’s time to share a new healthy salad, right? I bet many of you have fun new year’s resolutions, or I should say goals. And I also bet that one of them perhaps is to eat healthier. I get it. I say that every year and to say; we keep up with it very well. My hub changed this diet and his lifestyle two years ago, and it literally changed him. He is a different person now not only because his self-esteem grew a lot with his close to 60 pounds weight loss, but he is a happier person, have a lot more energy, and he is a lot healthier.
We like to add greens to our diet. And with that said, we like to eat salads. Salads are an excellent way to add all those needed vitamins and with chicken added you can take your protein intake as well. Salads are also excellent as they can be put together in less than 15 minutes. For this salad, I used cooked ( I cooked it beforehand) quinoa and I grilled the chicken before hand as well. If you plan on eating salads few times a week, I would suggest to cook 2-3 portion of chicken and keep in your refrigerator. That way it only takes a few minutes to put together the basic ingredients.
- 2 cups kale chips
- 1 cup romaine lettuce
- ⅓ cup katemala olives
- 1 cup sun-dried tomatoes
- 2 cups cooked quinoa
- 1 grilled chicken breast ( or use shredded rotisserie chicken)
- ½ cup cucumber sliced
- salt, pepper
- greek salad dressing
- Toss ingredients together and serve imeediately.
This fresh salad will make a great lunch or dinner on busy weekdays.
