I am so buys with projects and all that and I just realized I have not shared a recipe for a while. Wow. I love summer and it’s hard to believe that it’s almost over. Tomorrow is August 1st…? Crazy! Summer is for fun, plenty of eating outside, enjoying great breeze nights with friends out on a patio.
Today I am sharing a great and super easy mozzarella & tomato appetizer recipe that you can put together in minutes, grab and go to your next cookout party.
Cherry tomatoes are my favorite and they never last too long in my refrigerator. I love how sweet and crunchy they are and I wish we could grow them on the backyard. Mozzarella cheese is one of the kind of cheese that I always have at home. I use it for sandwiches, for appetizers and cooking. When a spontaneous cookout party comes up at my friends house I can easily put together this easy appetizer in no time. It’s best of chilled for at least 30 minutes.
- 1 tube Mozzarella Cheese
- 1 cup Ripe baby Tomatoes
- Handful of fresh basil, chopped
- ¼ cup Extra Virgin Olive Oil
- ¼ cup Balsamic Vinegar
- (toothpick to garnish)
- Slice the Mozzarella
- Layer the Mozzarella on a platter and add baby tomatoes on top
- Stir together Olive oil and vinegar
- Drizzle the dressing over the Tomato and Mozzarella
- Sprinkle with fresh, chopped basil
- Chill it before serving.
This easy appetizer is great for any occasions and it is especially great if it is paired with fresh bread and a glass of wine.
