Happy- Butternut Squash Soup- Monday!

Hope you all had an amazing weekend! Here in VA we had such wonderful weather, it was just too gorgeous to be inside the house so we went pumpkin picking with the boys and all that good fall activities were happening.

Fall is so great.

I love the beautiful foliage, the trees are amaze me every day. Oh…fall colors!

Today’s soup also has an amazing fall color…pretty yellow.

Have you ever made butternut squash soup? The Panera kind? I fell in love with this soup when I tried it first time and then I needed to replicate it at home.

Such an amazing, easy and healthy comforting soup for fall chilly days.

BUTTERNUT SQUASH SOUP {copycat panera}

  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 tablespoon fresh rosemary (1 teaspoon dried)
  • 1 medium butternut squash, peeled and chopped
  • 6 cups chicken stock
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • Hot pepper sauce
  1. Melt butter in large saucepan
  2. Add the chopped onion and rosemary and cook for 5 minutes or until soft.
  3. Add chopped squash, chicken stock, heavy cream, salt, white pepper.
  4. Add little bit of hot sauce { according to your taste }
  5. Reduce heat and cover. Simmer for approximately 45 minutes – or until squash is tender.
  6. Use blender to puree the hot soup.
  7. Garnish with toasted pumpkin seeds or sunflower seeds.

Very simple recipe with not too many ingredients.
Oh and just to mention, this soup is so good for you!
Butternut squash is very low in fat, full of fiber and antioxidants.
This fantastic soup will be a great addition to your Fall soup collection.
