EASY AND DELICIOUS SHAKSHUKA RECIPE

New year, new flavors in my kitchen. Today I am sharing a fantastic and very tasty dish, Shakshuka recipe.

Last October I was invited to New York city as one of the BHG Stylemakers of 2016. What an honor! I was so excited and enjoyed every bit of the three-day event in New york City. Our days were filled with so much inspiration. Padma Lakshmi was the closing speaker of the event and I listened to her beautiful story that truly inspired me.

I love to cook.

And I love to eat.

I love flavors…, and I am so lucky (genetically) that I can eat anything and everything I want without gaining weight.
I love to use spices when I cook and I do use them on a daily basis but, my spice collection was pretty much reduced to 5-6 things.

These are the spices I use literally every day, however,  cumin, coriander, turmeric…I pull them out only once in a blue moon. To tell you the truth, I didn’t even have these spices in my drawer.

Reading Padma’s book on the way home totally made me stop at the store and buy these spices.
The first dish I made using these spices was the SHAKSHUKA. An amazing one skillet dish.

Very tasteful and the dish can be done in 30-40 minutes.

SHAKSHUKA RECIPE

SHAKSHUKA RECIPE

An amazing one skillet dish, Shakshuka.
Ingredients
  • 2 tbsp. olive oil
  • 1 large onion, chopped
  • 1 large, red sweet pepper
  • 1 jalapeno chile pepper, stemmed, seeded and chopped
  • 3-4 garlic cloves
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1 tsp. turmeric
  • 28 oz can tomatoes
  • 6 eggs
  • turkey bacon chips
  • fresh parsley
  • feta cheese crumbled
  • bacon to top the dish
Instructions
  1. In a large skillet heat olive oil. Add onion, sweet pepper, jalapeno, garlic, cumin, paprika, salt, and pepper.
  2. Cook and stir for 8-10 minutes.
  3. Stir in undrained tomatoes.
  4. Bring to boil, then reduce heat. Simmer and cover for about 10 minutes.
  5. Crack eggs, one at the time into a small dish and carefully pour into sauce.
  6. Cook until desired.
  7. Sprinkle the top of your dish with feta and bacon chips.

This dish is simply amazing. I’ve made it many times since my first try and ever time I make it it’s a huge success in the house.
