Well, its almost the end of the week..How about an easy dinner idea for a Thursday night..?
I gotta share this fantastic and SUPER easy recipe ( I know..i say that for every recipe:-) but its truly is!!
This recipe is on our favorites list for a long time. I usually use whatever I have at home to make this frittata richer.This time i used Feta cheese and Spinach and we all emptied our plates.
Preparation is no longer than 5 minutes. You can lay on the couch and read your shiny papers or perhaps get the laundry done until its baking in the oven.
FETA-SPINACH EGG FRITTATA
Makes 4 servings
¼ cup low fat milk
¼ cup feta cheese
¼ cup shredded cheese
¼ tsp. salt
¼ tsp. freshly ground black pepper
1 cup fresh spinach, chopped
1, Preheat oven to 375 F.
Lightly coat a 9 inch pie plate with cooking spray and set aside.
2, In a medium bowl, whisk together eggs, milk, cheese, feta, salt and pepper.
3, Stir in Feta cheese and spinach and pour into prepared plate.
4, Bake about 25 minutes and let stand 5 minutes before serving.
