Busy mornings? Oh, yeah! Especially back to school being right around the corner, the crazy and hectic mornings are on the horizon for sure. Full breakfast is rarely an option for the hubby or me. Even the kids only get to eat cereal before they leave for school. But I feel that a healthy breakfast is simply necessary for a good start of a day. Do you agree?
I am all about juggling business, kids, and life and have very little time to prepare healthy breakfast or snacks most days, so I have to come up with fast but nutritious choices.
The other day I was wandering at Target, my favorite one-stop shop, and picked up a few packs of yogurts as we always have yogurt in the fridge.
We also always have fruit, most definitely berries, during the summer months. I picked up the Oikos Mixed Berry flavor and made this yummy Mixed Berry Chia Pudding which can make the perfect breakfast and can be a great as an afternoon snack as well. You just mix all of the ingredients in a bowl and leave it to sit for an hour or so. You can also prepare this delicious snack the night before and leave it in a fridge, so when you wake up in the morning, you’ll have a nutritious breakfast waiting for you!
Did you know that Chia seed is exceptionally nutritious, and are filled with all sorts of vital nutrients, like fiber, protein, antioxidants, calcium, and plant-based omega-3 essential fatty acids? Mix that goodness with zero calories Oikos Greek nonfat yogurt and Boom! There you have the most nutritious punch!
MIXED BERRY CHIA PUDDING recipe is here!
- ¾ cup almond coconut milk
- ¾ cup nonfat Okios Greek yogurt (any flavor)
- 3.5 tablespoons chia seeds
- 2 tablespoons honey * optional
- ½ teaspoon vanilla extract
- 1 cup mixed berries divided use
- Optional toppings: granola
- Place the almond milk, yogurt, chia seeds, honey, and vanilla in a bowl and stir until combined. Take ½ cup of berries and stir the berries into the mixture.
- Place into refrigerator for overnight. When ready to serve, divide the pudding into two bowls and garnish with remaining berries and other desired toppings.
My kids love Activia yogurt, so for them, I can prepare the same mixture using their favorite flavor of Activia yogurt. I also love to sprinkle this mixture with granola for more texture and crunchy finish.
