These Cranberry Banana Oat Bars are perfect and healthy afternoon snacks . They are not too sweet but packed with banana flavor.I had a few very ripe bananas and I did not want to throw them away instead I looked for a healthy snack recipe.
I try to think of a healthy snacks for my kids as much as possible. I especially like the ones we can just grab and take with us when we are on the go.
You most likely will have these ingredients in your pantry.Just mix them together and bake these excellent Oat Bars for your whole family.
I found this recipe on the web. I modified the original recipe and added a layer of yogurt spread on the top of the mixture before baking it, which gave a great fruity taste to it!
BANANA CRANBERRY OAT BARS
¼ cup milk
½ cup brown sugar
1 tbsp ground flax seed
¼ cup coconut oil(or other light tasting oil)
1 tsp vanilla extract
2 medium ripe bananas
1/3 cup dried cranberries or raisins
1.5 cup regular oats
½ unsweetened coconut
1 tsp cinnamon
¼ cup whole wheat flour
½ tsp baking powder
1/8th tsp salt
1 cup flavored Greek yogurt
1 egg, slightly beaten
2 tbsp flour
Preheat oven to 350 F and line 8 inch square pan with parchment paper.
In a medium bowl, combine milk, sugar, ground flax seeds, , oil, and vanilla. Whisk together.
Mash bananas with fork, stir in Cranberries or Raisins and set aside.
In another bowl, mix dry ingredients. Add the wet mixture and stir together.
Scoop the granola batter into pan and press it down with spoon.
Mix together Greek yogurt, egg and flour. Spread over the mixture in the pan.
Bake at 350 F for 35-40 minutes until edges are golden brown. Allow to cool in pan for 10 minutes and transfer over to a wire rack to cool completely.
Mix together wet ingredients.
Stir Bananas and Cranberries together.
Mix Banana mixture to wet mixture.
Mix dry ingredients together.
Scoop into prepared pan and spread yogurt on the top.
Bake it for 30-40 minutes.
