FRESH STRAWBERRY DRESSING
Strawberries are in season now and there is nothing better than a chilled Fresh Strawberry Dressing over your favorite summer salad.
Today I pop in to share a super easy summery salad dressing with you all. It’s a fact that Strawberry is one of my favorite summer fruits. I love it in any form: on a cake, on my ice cream, in my salad and even when it’s made as a wonderful fresh salad dressing. Every year we go the a local farm to pick a few big trays of strawberries. Oh, how we love to go. The kiddos always look forward to the day to come. We have not gone this year just yet but it’s soon to be time for some fresh strawberry pickin’
Summer nights are usually busy with the boys so most of time we throw something on the grill ( chicken, fish or a burger ) and we serve the meat with fresh salads. This delicious strawberry dressing is just perfect with fresh green salads. This super refreshing salad dressing is wonderful to add a splash of sweetness to your favorite salad that you can whip up in minutes. I especially love this dressing on my spinach salad.
- 1 cup strawberries, rinsed, sliced
- 1 tbsp balsamic vinegar
- 3/4 teaspoon freshly ground pepper
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 2 tablespoon canola oil
- Place strawberries, vinegar, pepper, sugar and salt in a blender until pureed.Add 2 tablespoon oil and process until smooth.
I store my dressing refrigerated. It’s perfect even after several days. Mine usually does not last too long, though:-)
