Let’s cook some Lentil soup for a prosperous new year.I am a believer in eating foods on new years day that symbolize good luck and prosperity.
In many countries around the world lentil is considered as a lucky food because the round lentils symbolize coins.
I have been cooking this recipe since my first child was able to eat this consistency. I found this recipe in one of my organic baby cook books.This soup is excellent for freezing…and nothing is better on a cold winter day when you are able to grab a homemade soup out of your freezer.
1 tbsp olive oil
2 garlic clove
¾ cup diced onion
4 cups warm water
1 bouillon cube(vegan, chicken or beef)
1 cup diced carrots
½ cup diced celery
½ lentils(let it sit in water for
2 cup diced tomatoes with liquid
1. In a large stock pot, heat olive oil over medium-high heat
2. Saute garlic and onion for 5 minutes
3. Add water, bouillon cube, carrots and celery.
4 .Rinse and pick over lentils, and add to pot.
5. Add tomatoes
6. Cover and simmer for 45 minutes
