Sautéed cabbage and carrots

The hub and I love to have a date night each month. Even during our travels, we try to keep this sweet tradition. We visited a local restaurant in Richmond, VA, and had this delicious dish as an appetizer at one of my (now) favorite restaurants. After a few days of that visit, I was craving this cabbage recipe so much that I decided to try to recreate the dish at home.

Well, let me just say that it was pretty dang close to what they served us at the restaurant. 🙂

Becuase of our eastern European origin we eat a good variety of cabbage dishes.

One of the most popular dishes we make around Christmas time is Stuffed Cabbage. I still prepare it every year for the holidays, but now I make it with impossible meat.

Cabbage is a very nutritious vegetable that is loaded with antioxidants and vitamins. Some of the health benefits of cabbage include improved digestion and stronger immune system. So next time you are looking for a healthy side dish to serve, be sure to try out this sautéed cabbage and carrots recipe!

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

  • 4 tablespoons unsalted butter
  • 2 tablespoons, avocado oil, coconut oil, or olive oil
  • 1 medium onion, chopped lengthwise
  • 1/2 head green cabbage, cut into chunks
  • 3-4 large carrots- cut into chunks
  • 4 cloves garlic, minced
  • 2 cups low sodium vegetable stock
  • 1/2 teaspoon salt and pepper, or to taste
  • (I also love to use Everyday Seasoning from Trader Joes for almost every dish I make!)
  • 1/2 teaspoon red chili pepper flakes, or to taste

Preheat a large skillet over medium heat.

Add in butter and the olive oil and let it heat up for a minute or so.

Add in onion and sauté it until softened - about 3-4 minutes.

Add in cabbage and cook for about 4-5 minutes, stirring from time to time.

Once the cabbage starts to caramelize on the edges, add garlic, chopped carrots, salt pepper, and red chili pepper flakes.

Pour in half a cup of the vegetable stock. Cover and cook until the sauce reduces slightly.

Add the rest of the vegetable stock and simmer for about 10-15 minutes or until the carrots and cabbage are soft.

Season with more pepper to taste and enjoy!

How to cut the cabbage into chunks?

If you are looking to cut your cabbage into chunks, you can do so by following these simple steps:

1. Cut the cabbage in half, then cut each half into quarters.
